This is me being terrible at softball. I really do wish I hadn't started playing. I hate to say it but I'm just being honest. I am terrible and I don't do the team any good. I can't hit the ball and I can't catch. Oh and I get a lot of outs. I thought trying something new would be fun. Nope. Not yet anyway.
My sister let us adopt her six month old Dachshund! He and their resident dog weren't getting along well. His name was originally "Sonic (the hedgedog)" but we decided to change it to Oscar. He is a lot of fun but a pain. We have to constantly watch him and if one of us leaves the room he has to follow. If I go in the bathroom and shut the door he cries and whines. Hopefully he'll grow out of it.
Vegan sources of Omega 3. I need to really work on getting healthy fats into my diet. I like Brussels sprouts, cauliflower is doable, tahini I can use in soups and hummus, the others I will need to work on.
Three things I need to work on: 1) positive self talk, 2) taking my battle with weight and eating one day at a time, and 3) I need more structure. And #3 is the reason for this food picture. Planned out and on a schedule. Apple @ 10, Awesome Stew and Spinach tortilla @ lunch, Grapes for my after lunch sweet tooth, and PB crackers @ 3. The almonds are there just in case... sort of like a back up food. And I usually only eat 5 at a time.
Thankfully summer school is over and I can think again. Think of things other than chromosomes and demand curves. I can focus on my weight and formulate a healthy plan.
I feel a sense of clarity right now. And that is empowering.

1 onion
1 green pepper
1 yellow pepper
1 large sweet potato
1 small can of mushrooms with liquid
1 can of Rotel with liquid
1 can of green chilies
1 cup frozen corn
1 tablespoon of oil
1 cup of water
Get out the big pot. Heat oil, add onions and let cook for 4 minutes or so, add green pepper, add yellow pepper, toss and let cook while you cut up the potato. Add in cubed potato, add the canned food, add the corn, add the water and bring to boil, turn down heat to simmer for 2 hours. Or until the veggies are cooked to your taste.
