Lunch :)

I'm trying to watch my calories at lunch and so normally I bring a homemade soup.
Well - I got tired of that.
So I had to think of something new.
And low cal.
But still yummy.

This is an Amys Kitchen lasagna!

Amy's brand has a meal for everyone but they are really good at making it easy on vegetarians and vegans. So many choices and flavors. http://www.amys.com/products 

I also use an app called NxtNutrio which allows you to see if a food has harmful chemicals and oils added to it. It also allows you to make a profile so you can specify whether you have any food allergies. Then you scan the food and it will should you either a green check, red x, or yellow exclamation and then it lists the ingredients.
All of the Amy's food that I have scanned so far get the green check! :)

I shoulda had a V8.

Last weekend when i was playing softball i slightly injured my right thigh. But it was nothing. Just a little pull. I really only felt it when i tried to do lunges friday morning in body pump. Life went on and all was well. Saturday i was walking Oscar and he got excited and started running. So... i ran with him. Then i noticed that i couldnt run well because my thigh (quads) was still sore. So i decided to chill out. I didn't want it to be hurt for Sunday night's game.

Fast forward to Sunday Night's game.

It's 8:30 and the game has just begun. I am able to hang out for a while because a) my team was home so they started in the field and b) i was way down the batting list so even when they came in i knew i had plenty of time before i had to play.  
I went to my husband who was sitting on the bleachers. He had my phone and i wanted to get on it so i could see what team we were playing next. I took the phone and stepped off the bleachers.


Instant pain followed by blurry vision, nausea, and hyperventilation. I seriously thought i was about to pass the hell out.  

I couldn't even think straight and i was shaking. And then all of a sudden its my turn to bat. I dont even remember going out there that first time.
I was in so much pain. But there was nothing i could do. The game had already started so i had to stay there because they had already turned in the line up.

I have a high pain tolerance. Really. I do. But this. This was something different. Something i had never experienced before.
After the game ends my husband drives me out to a 24 hour urgent care. The car ride was awful!
Then i get in there and the doctor is trying to figure out which muscle i pulled and he grabs it! Hard.
He nearly took me to the ground.
Then he put an ace bandage on it and wow that made it hurt like 10 times more

Anyway he wrote a prescription for physical therapy 3/week for 4 weeks.
But today it hasn't really bothered me. All that pain last night, i just knew today would be bad, but it isn't bad at all. I can't walk normal but that's really it. I will go for evaluation Friday morning so we'll see how that goes. But i really doubt that i need all of that therapy.

This is me being terrible at softball. I really do wish I hadn't started playing. I hate to say it but I'm just being honest. I am terrible and I don't do the team any good. I can't hit the ball and I can't catch. Oh and I get a lot of outs. I thought trying something new would be fun. Nope. Not yet anyway. 

My sister let us adopt her six month old Dachshund! He and their resident dog weren't getting along well. His name was originally "Sonic (the hedgedog)" but we decided to change it to Oscar. He is a lot of fun but a pain. We have to constantly watch him and if one of us leaves the room he has to follow. If I go in the bathroom and shut the door he cries and whines. Hopefully he'll grow out of it.

Vegan sources of Omega 3. I need to really work on getting healthy fats into my diet. I like Brussels sprouts, cauliflower is doable, tahini I can use in soups and hummus, the others I will need to work on.  

Three things I need to work on: 1) positive self talk, 2) taking my battle with weight and eating one day at a time, and 3) I need more structure.                                                            And #3 is the reason for this food picture. Planned out and on a schedule. Apple @ 10, Awesome Stew and Spinach tortilla @ lunch, Grapes for my after lunch sweet tooth, and PB crackers @ 3. The almonds are there just in case... sort of like a back up food. And I usually only eat 5 at a time.  

Thankfully summer school is over and I can think again. Think of things other than chromosomes and demand curves. I can focus on my weight and formulate a healthy plan.
I feel a sense of clarity right now. And that is empowering.

Awesome Stew
1 onion
1 green pepper
1 yellow pepper
1 large sweet potato
1 small can of mushrooms with liquid
1 can of Rotel with liquid
1 can of green chilies
1 cup frozen corn
1 tablespoon of oil
1 cup of water

Get out the big pot. Heat oil, add onions and let cook for 4 minutes or so, add green pepper, add yellow pepper, toss and let cook while you cut up the potato. Add in cubed potato, add the canned food, add the corn, add the water and bring to boil, turn down heat to simmer for 2 hours. Or until the veggies are cooked to your taste.

Friday are almost always fun!
Whether you work in an office
Go to school
Have a significant other that works m-f
Either way the majority of us look forward to Friday because we’ve spent half the day grinding away at our jobs, or our school-work or our house cleaning and then that certain time hits on Friday and Boom! Bam! Bang! All done! Now we can relax.
Monday – Thursday isn’t like that because you know you have to get up early the next day and get back to it.
So - Friday’s rock!

 My friend B and I started the Herbalife challenge yesterday.
I am so motivated.
I am feeling fresh and new.
I am so flippin freakin excited.
I hope the feeling stick around for the entire challenge.

We had another softball practice. Man I suck.
I’m going to look like a complete idiot out there.
Oh well!

This morning my friend B and my husband and I all went to BODY PUMP! To work on our fitness and get some of those sexy lady muscle. Well except my husband… he probably wants man muscles.

Summer school is finally winding down!!
I took my economics test last night and made an A!!! Woo hoo!!
But I’ll have to spend all weekend and the first part of next week preparing for the Biology test.
I will never ever ever ever EVER take a science class in the summer again. No way. Not after this. I like to make good grades and I feel like taking it in the summer didn’t allow me to spend enough time on it. I will most likely have a B for my final grade. This is great except I know that I could’ve gotten an A had I taken it in a normal semester.

Win win win No Matter What

Grapefruit Diet? Wait, you mean only eat a grapefruit for each meal?

No no no, silly. Eat ½ a grapefruit before each meal. Trust me it works!

Yea… not sure if I’m ready to jump on that train just yet. Pretty sure the last grapefruit diet left the station about 15 years ago and hasn’t come back. It crashed and burned.

Something very traumatic happened to me last week.

My husband swears it was due to my outfit.

Scene: I was at my sister’s house last week hanging out with the kiddos. Christian is my 6 year old nephew.

Christian: Auntie Des are you having a baby?

Auntie Des: No! I’m not having a baby.

Christian: Oh well it looks like it. (Pats me on mystomach.)

Wow! If that’s not a sign to lose weight then I don’t know what is!

I was super bummed.

My outfit was a white cami with a black cardigan that I wore openand then a chunky black belt around my waist. My husband thinks that the belt made the fabric around my stomach pooch out and look like a “baby bump”.

I disagree. I think the little fella is on to something. No! I’m not preggers but I have gained weight. I can tell and I don’t like it. Not one bit.

But, excuses being excuses as they are, I’m stuck in a rut.

I only follow through with workouts during the week if they are in the morning before work but on the same token I can hardly ever pull myself out of bed more than three days a week for an early am workout.

I used to be so so so dedicated. Gym no matter what. I found the time and the way.

What happened!

Burn out?



That’s for sure.

Anyway my friend and I are planning on doing a “challenge”. She sells Herbalife, for those who may not know, Herbalife is a shake mix and you replace your meals with it.

So when our shake mix comes in we will do the following:

Take photo of ourselves on the scale to send to one another

Drink 2 shakes per day with the general understanding that we can’t pig out on our “food” meal

5 days per week we get some form of physical activity

Whoever loses the highest % of weight in 2 weeks gets to choose punishment for the loser.

Now, I’m all about learning to control your weight with “Real”food but right now what I need is a good kick in the pants and I think this challenge will do that for me.

Another interesting thing happened to me. My friend’s softball team needed another member so I signed up. What was I thinking!! I have no clue how to play and the bat tried to eat my hand off. Seriously. I would show you a picture but it’s disgusting. I am having a lot of anxiety about it. I almost just told her never mind after I went to the first practice. BUT I hate being a quitter or quitting on someone when I’ve already committed myself.

So we’ll see how that goes.

School! Ahhhhhhhhhhh!!! I’m going insane!! It’s almost over It’s almost over It’s almost over

I just have to make through one more week. Just one more week.

Space Alien Vegetation

Funny looking food.

Some of them look downright odd. As if they were dropped here from outer space.

What on Earth is inside that thing? What will it taste like? My little mind just knew it had to be something terrible.

But as an adult and with a new way of eating, I let go of my childhood vegetable fears and I started trying all sorts of crazy looking things.

I love to try new vegetables! So when I discovered artichoke ( which I roast in the oven and it’s so yummy I don’t even mind waiting an hour and 15 minutes) I was in heaven! Those pointy sharp tips no longer terrified me. Just snip ‘em right off! Weird fuzzy center… scoop it away with a spoon. Easy Cheezy.

Then kale. Those strange green leaves which were too big to be salad and with that name, I just knew it came from the sea. (Side note: I have never been able to eat sea food.  Or any water food for that matter. Just could never make myself do it… well without gagging.)  But once again I stepped out of my zone. With kale my brain nearly exploded. Kale is where it’s at. But it’s been used to death.

And So.

I have come to love a new vegetable.


Yes the ugly, fat, misshapen, purple vegetable.

The vegetable that was once so mysterious to me.

For lunch I like to take food to work to save money and my waistline. This week it is White Bean and Kale soup from the Skinny Bitch cookbook and while kale is amazing and that soup is amazing, I want to try something different. Something Eggplanty.

So I decided on the most obvious dish.

RATATOUILLE!! Ratatouille is a dish I have made in the past but it was like a casserole and what I want is more of a soup.

Yea I know… I’m probably the only weirdo who likes a nice warm soup in midsummer.

So I’m taking a basic Ratatouille recipe and adding it to my big soup pot and cooking all together rather than separated by layer.

Ratatouille (my way)

1 tablespoon grapeseed oil (You could use olive oil. I just don’t happen to have any.)

1 eggplant cubed

1 small onion chopped

1 red pepper chopped

1 green pepper chopped

2 tablespoons of garlic minced (I use the kind from the jar)

1 can of mild Rotel

2 zucchini sliced

3 tablespoons of basil

¼ teaspoon of cayenne

Salt and pepper to taste.

I’m just going to put my oil in the pot and add in the eggplant first. I’ll let it cook for five minutes or so, on its own. Then I’m just going to add in all of the other ingredients and cook until everything is nice and tender. It may need more liquid that what comes from the can of Rotel. So if that is the case then I plan to just add a little water as I go. I don’t want it too soupy but I don’t want it too thick either. It’s a personal preference thing.

I’m going to the store tonight to pick up the ingredients. I can’t wait. I can’t wait! I’m hungry just thinking of it!

Pulling my hair out

Summer school, why must you take away so much of my freedom? Why do you throw me into near panic attacks with your heavy work load? Summer school, I would very much like to do away with you.
All of this stress is bad for my waistline!!
